Tabasco is only made up of Capsicum frutescens var. Tabasco), a chili sauce brand made of vinegar and salt. It's produced by the McIlhenny company on Avery Island, Louisiana.

According to company legend, Tabasco was first produced by Edmund McIlhenny in 1868. Edmund McIlhenny was born in Maryland and moved to Louisiana around 1840.

At first, all the peppers used in Tabasco were grown on the island of Eli. Today, pepper grown on the island is used to produce seeds, which are then transported to foreign growers, mainly in central and South America. In these areas, stable supply can be maintained throughout the year due to more predictable weather and availability of arable land. This ensures that capsicum can be used in the event of severe weather or other problems at specific growing locations.

According to the company's tradition, pepper is picked by hand. Tabasco State has released a reserve version of Tabasco state, in which pepper aged for eight years is mixed with wine vinegar.

The Tabasco diamond reserve is a limited edition bottle that was released in 2018 to mark the brand's 150th anniversary. The sauce consists of pepper aged 15 years and then mixed with sparkling white wine vinegar.

Most of the salt used in Tabasco production comes from the Avery Island salt mine, one of the largest in the United States.

Tabasco brands produce several condiments, including green based on Mexican pepper, smoked based chili, Havana, cayenne garlic, "sweet and spicy" and "buffalo flavor" condiments. Havana, jalapeno and garlic sauce include Tabasco peppers mixed with other peppers, while the jalapeno variety does not include Tabasco peppers. Tabasco chili sauce is sold in more than 195 countries and regions and packaged in 25 languages and dialects.
