Barbecue or barbecue (informally known as barbecue or Barbie) is a method of cooking, a food, a name for a meal or party where it can be cooked and served. Barbecue is carried out slowly under low indirect heating and seasoning food through smoking process, while barbecue (related process) is usually carried out rapidly under medium to high direct heating and produces little smoke.

Barbecue can refer to the cooking method itself, the meat cooked in this way, the cooking equipment / machines used ("barbecue stove" or simply referred to as "barbecue"), or social activities characterized by such cooking. Barbecue is usually done outdoors by smoking on wood or charcoal. Restaurant barbecue can be cooked in large specially designed brick or metal oven. Barbecue is practiced in many parts of the world, and there are great regional differences.

Barbecue techniques include smoking, baking or baking, stewing and barbecue. The original technique was to use smoke to cook at low temperature for a long time (several hours). The oven is used for baking, and the average cooking time is about one hour. Stew combines direct dry heat carbonization on the surface of the ribs with a wet pot full of broth. Barbecue is done by direct dry heat, usually over a hot heat for a few minutes.
